Ingredients

  • 1/2 cup sugar
  • 1 cup cashew milk
  • 1 cup coconut milk
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1 ounce vegan chocolate chips
  • 2 teaspoons coconut oil

Utensils needed

  • Medium Saucepan
  • Whisk

Instructions

Step 1
In a medium saucepan, add sugar, cashew milk, and coconut milk. Whisk to combine.

Step 2
Place saucepan on stove over medium heat and cook until sugar is dissolved.

Step 3
Add vanilla and salt and whisk to combine.

Step 4
Pour base into an empty CREAMiTM Pint. Place pint into an ice bath. Once cooled, place storage lid on pint and freeze for 24 hours.

Step 5
Remove pint from freezer and remove lid from pint. Place pint in outer bowl, install CreamerizerTM Paddle in outer bowl lid, and lock the lid assembly onto the outer bowl. Place bowl assembly on motor base and twist the handle right to raise the platform and lock in place.

Step 6
Select ICE CREAM.

Step 7
In a medium saucepan, add chocolate chips and coconut oil. Whisk to combine and cook until melted.

Step 8
Allow chocolate mixture to cool to about 80°F.

Step 9
With a spoon, create a 1 1/2-inch wide hole that reaches the bottom of the pint. Add chocolate mixture to the hole and process again using the MIX-IN program.

Step 10
When processing is complete, remove ice cream from pint and serve immediately.
