Ingredients

  • 3 cups water, for steaming
  • nonstick cooking spray
  • 1 cup all-purpose flour, plus more for dusting
  • 1 cup cocoa powder
  • 2 teaspoons cinnamon
  • 1 teaspoon nutmeg
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • Pinch kosher salt
  • 1/2 cup packed brown sugar
  • 1/2 cup granulated sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 cup shredded zucchini
  • 1/2 cup freshly brewed hot coffee
  • 1 cup semi-sweet chocolate chips

Instructions

Step 1
Pour 3 cups of water into the pot. Spray the bottom of the Multi-Purpose Pan (or 8-inch baking pan) with cooking spray and dust with flour.

Step 2
In a large bowl, whisk together the flour, cocoa powder, cinnamon, nutmeg, baking powder, baking soda, and salt until combined.

Step 3
In a second large bowl, whisk together the brown sugar, granulated sugar, vegetable oil, eggs, and vanilla until smooth. Stir the wet mixture into the flour mixture. Then add the zucchini and coffee. Mix until the batter is evenly combined. Fold in the chocolate chips.

Step 4
Pour the batter into the prepared pan. Place the pan on the bottom layer of the Deluxe Reversible Rack in the lower position, then place the rack in the pot.

Step 5
Close the lid and move the slider to STEAMCRISP. Select STEAM & BAKE, set temperature to 275°F, and set time to 60 minutes. Press START/STOP to begin cooking (PrE will display for approx. 20 minutes as the unit steams, then the timer will start counting down).

Step 6
When cooking is complete, remove the rack and pan. Allow bread to cool for about 30 minutes before slicing.
