Citrus-Herb Roasted Salmon with Zucchini & White Beans

Ingredients

  • 1 large zucchini, thinly sliced into rounds
  • 1 can (15 ounces) cannellini beans, drained and rinsed
  • 3 garlic cloves, peeled and minced
  • Small bunch parsley, roughly chopped
  • Small bunch dill, roughly chopped, divided
  • 6 tbsp extra virgin olive oil, divided
  • Kosher Salt, as desired
  • Ground black pepper, as desired 
  • 4 frozen salmon fillets (3.5 ounces each)
  • 1 lemon, ½ thinly sliced, ½ juiced
  • 1 small orange, ½ thinly sliced, ½ juiced
  • 1 tablespoon crème fraîche
     

1.    Add the zucchini, beans, garlic, half the chopped herbs, 2 tablespoons oil, salt, and pepper to the CleanCrisp™ Glassware. Toss to combine and spread around the sides, leaving space in the center for the salmon. Place the frozen fillets skin-side down in the center; season with salt and pepper. Top with citrus juice and slices, then drizzle with remaining oil.
2.    Place the CleanCrisp™ Glassware in the TOP POSITION. Press FUSIONCRISP. Set microwave time to 15:00 minutes. Press AIR FRY, set dial to 12:00 minutes. Press dial to begin cooking.
3.    When 3 minutes remain in air frying, use oven mitts to remove the glassware and check the salmon. You want hot, flaking salmon with crisp, almost-charred citrus on top. Continue cooking the remaining time as needed.
4.    When done, remove the fish, stir crème fraîche into the vegetables until evenly coated. Place salmon back on top and garnish with remaining herbs and serve.
