Blackberry Grilled Pork Tenderloin

Blackberries top the list for one the most keto-friendly fruits, as they are only 6 net grams of carbs in 1 full cup. This recipe calls for frozen blackberries because they are softer and easier to create the marinade with. They also become beautifully caramelized when cooked on the Foodi™ Grill. Ingredients

  • 1 1/4 pounds pork tenderloin
  • 1 teaspoon sea salt
  • 1/4 teaspoon freshly ground black pepper
  • 1 cup frozen blackberries, thawed
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon melted coconut oil
  • 1 tablespoon erythritol
  • 1 1/2 teaspoons Dijon mustard
  • 1/4 teaspoon ground ginger

Utensils needed

  • Grill Grate
  • Medium Bowl

Instructions

Step 1
Season the pork loin with salt and pepper and place it in a resealable plastic bag.

Step 2
In a medium bowl, mash the blackberries with a fork. Stir in the vinegar, coconut oil, erythritol, mustard, and ginger until well combined. Pour the marinade over the pork. Seal the bag and massage the marinade into the pork loin until it is completely coated. Refrigerate for 30 minutes. Flip the bag and continue marinating for an additional 30 minutes.

Step 3
Insert the Grill Grate and close the hood. Select GRILL, set the temperature to HIGH, and set the time to 12 minutes. Select START/STOP to begin preheating.

Step 4
When the unit beeps to signal it is preheated, place the pork directly onto the Grill Grate. Close the hood and cook for 6 minutes. After 6 minutes, flip the pork, close the hood, and cook for an additional 6 minutes.

Step 5
Remove the pork from the grill. Let rest for 5 minutes before slicing and serving.
