Beef Enchiladas
Ingredients
- 3 cups cooked ground beef
- 1 packet (1 ounce) taco seasoning
- 1 can (4 ounces) diced green chilies
- 2 1/2 cups red enchilada sauce, divided
- 2 1/2 cups shredded Mexican cheese blend, divided
- 6 (8-inch) flour tortillas
- Cotija cheese, crumbled, for garnish
- Cilantro, roughly chopped, for garnish
- Sour cream for serving
1. In a large bowl, add cooked ground beef, taco seasoning, green chilies, and ¾ cup enchilada sauce and stir to combine.
2. Start building the enchiladas by placing 1/2 cup of the chicken mixture and ¼ cup of shredded cheese in a line down the center of a tortilla, then roll up the tortilla and place opening side down into the CleanCrisp™ Glassware. Repeat this step with the remaining tortillas.
3. Once all enchiladas have been assembled, add the remaining enchilada sauce evenly over the top and add the remaining 1 cup of cheese to the top in an even layer. Place CleanCrisp™ Glassware in the TOP POSITION.
4. Press the FUSIONCRISP button. Turn the dial to set microwave time to 8:00 minutes. Press the AIR FRY button, turn the dial to 5:00 minutes. Press dial to start cooking.
5. When cooking is complete, use oven mitts to remove CleanCrisp™ Glassware from unit, top with cotija cheese and cilantro and serve with sour cream.
