Ingredients

  • 7 graham crackers
  • 3/4 teaspoon kosher salt
  • 2/3 cup all-purpose flour, plus extra for rolling
  • 5 tablespoons granulated sugar, divided
  • 2 large eggs, divided
  • 1/2 cup (1 stick) unsalted butter, melted, cooled, divided
  • 1 pound strawberries, hulled, sliced
  • 1/2 teaspoon grated lime zest
  • 1 teaspoon fresh lime juice

Utensils needed

Instructions

Step 1
Preheat oven to 350°F.

Step 2
Place graham crackers in a large resealable plastic bag and seal, making sure to press out any air. Using a rolling pin, roll over the crackers, crushing them into fine crumbs.

Step 3
In a medium bowl, add 1 cup graham cracker crumbs, salt, flour, and 2 tablespoons granulated sugar. Mix to combine, then add 1 egg and 6 tablespoons melted butter. Mix until a dough forms, then knead with hands until ingredients are fully incorporated, and dough is smooth.

Step 4
Lightly flour a piece of parchment paper and place dough on top. Cover dough with second piece of parchment paper. Using a rolling pin, roll dough into round approximately 1/8-inch thick and 12-Inches in diameter. While rolling, add more flour as needed to prevent sticking. Place bottom parchment and rolled dough in pan.

Step 5
Sprinkle 1 tablespoon sugar over dough, leaving a 2-inch border. Place strawberries over center of dough, making sure to leave 2-inch border.

Step 6
Top strawberries with 1 tablespoon sugar, remaining melted butter, and lime zest and juice.

Step 7
In a small bowl, beat the remaining egg. Lightly brush egg wash over 2-inch border of dough.

Step 8
Using edges of parchment to help lift, fold over the dough border in 2-inch sections. Dough folds should overlap and partially cover strawberries. If dough cracks or tears, just pinch it back together.

Step 9
Brush top folds of dough with egg wash and sprinkle with remaining sugar.

Step 10
Transfer galette to oven and bake uncovered for 40-45 minutes, or until strawberries are syrupy and crust is browned around edges.

Step 11
When cooking is complete, allow galette to cool for 20 minutes in pan. Once cooled, remove galette from pan, slice, and serve.
