Southwestern Style Rice Bake
Ingredients

1 green bell pepper, diced in 1 /4-inch pieces

1 medium yellow onion, diced in 1 /4-inch pieces

1 teaspoon Kosher salt 1 /2 teaspoon ground black pepper

1 cup long grain white rice
-
2 cups vegetable broth
-
1 packet (1 ounce) taco seasonings
-
1 jar (16 ounces) salsa
-
1 can (8 ounces) tomato sauce
-
1 can (15.25 ounces) corn, drained

1 can (15.5 ounces) black beans, drained

2 cups shredded Mexican blend cheese

Cilantro, chopped, for garnish
- Add all ingredients except cheese and cilantro to the CleanCrisp™ Glassware and stir to evenly combine. Place the CleanCrisp™ Glassware in the TOP POSITION.
- Press the FUSIONCRISP button. Turn the dial to set microwave time to 30:00 minutes. Press the AIR FRY button, turn the dial to 8:00 minutes. Press dial to start cooking.
- When 15:00 minutes remain in microwave cooking, use oven mitts to remove CleanCrisp™ Glassware from the unit, stir the mixture, and add cheese on top in an even layer. Then return to the unit to continue cooking.
- When cooking is complete, remove CleanCrisp™ Glassware from unit, and allow to sit for 5–10 minutes before garnishing with cilantro and serving.
