Ingredients

  • 2 green (unripe) plantains
  • Olive oil cooking spray
  • 3 cups water, or as needed
  • Kosher salt, as desired

Instructions

Step 1
Insert the crisper plate into the 2.5-quart container. Slice the tips off the plantains. Make a vertical cut in the skin from end to end, making sure to cut only through the thick skin and not into the plantain flesh. Cut plantain, with the peel on, into 1-inch chunks. Peel the skin off each chunk starting at the slit you made.

Step 2
Place the plantain pieces on the crisper plate and spray with oil spray. Adjust the modular base into the upper position on the spine to lift the container to the heating element for sealed cooking. Insert the container into the station. Use the dial to select AIR FRY, set temperature 400°F and set time to 8 minutes. Press start to begin cooking.

Step 3
In a large bowl, add the water and salt. When plantains are done cooking, remove container from unit. Using silicone-tipped tongs, remove plantain pieces and place on plate. Using the back of a spoon, smash to ½-inch thickness.

Step 4
Soak the smashed plantains in a bowl of salt water for 5 minutes.

Step 5
Remove plantains from water and pat dry with a paper towel. Place half of the tostones to the crisper plate in single layer. Spray the tops with olive oil spray and season with salt. Insert container into the station. Use the dial to select AIR FRY, set temperature 400°F and set time to 8 minutes.

Step 6
When cooking is complete, tostones will be golden brown and crispy. Remove container from unit and repeat the process with the remaining tostones.
