Ingredients

  • 1 lb Niman Ranch Ribeye Steak, Prime
  • Kosher salt, as desired
  • Ground black pepper, as desired
  • 1 packet (1 ounce) fajita or taco seasoning
  • 4 tablespoons canola oil, divided
  • 1 medium yellow onion, peeled, cut in half, thinly sliced
  • 1 large red bell pepper, seeds removed, thinly sliced
  • 6 taco tortillas

TOPPINGS (optional)

  • Shredded cheese
  • Pico de Gallo
  • Guacamole
  • Sour Cream
  • Cilantro
  • Lime Juice

Instructions

Step 1
To install the grill grate, slide it into the front of the base so it hooks in, then press down on the back until it clicks into place. Install griddle on top of grill grate so it sits flat. Select BBQ GRIDDLE, set temperature to 400°F, and set time to 20 minutes. Close the hood and press the dial to begin preheating (preheating will take approximately 10 minutes).

Step 2
Coat the beef on all sides with salt, pepper, and fajita or taco seasoning. When unit beeps to signify it has preheated, open hood and add 2 tablespoons canola oil to the griddle. Place beef individually on griddle and spread out over the surface. Leave hood open to begin cooking.

Step 3
After 2 minutes, close the hood and continue to cook for 3 minutes. Open hood, remove beef from griddle, and set aside. Drain any accumulated liquid from griddle, then return the griddle plate back to the grill, close hood, and heat for 2 minutes.

Step 4
Open the hood, add the remaining oil, onions, and peppers to the griddle. Leave hood open and cook, tossing frequently, for 6 minutes.

Step 5
After 6 minutes, add beef back to the griddle with the vegetable. Leave hood open and cook for 2 minutes.

Step 6
When cooking is complete, remove the beef and vegetables from the griddle. Serve with tortillas and toppings as desired.
