Ingredients

  • 1 cup all-purpose flour
  • 2 tablespoons granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon kosher salt
  • 1 1/4 cups buttermilk
  • 1 large egg, lightly beaten
  • 1/4 cup creamy peanut butter
  • 2 tablespoons unsalted butter, melted
  • Vegetable oil, as necessary

Peanut Butter Syrup

  • 2 tablespoons creamy peanut butter
  • 1/4 cup maple syrup

Utensils needed

  • Large Bowl
  • Two Small Bowls

Instructions

Step 1
In a large bowl, add flour, sugar, baking powder, baking soda, and salt and mix with a spoon to combine.

Step 2
In a small bowl, add buttermilk, egg, peanut butter, and melted butter. Assemble the hand mixer attachment on the power base, then install the beaters. Press power to mix on speed 1 until evenly combined, about 30 seconds.

Step 3
Pour liquid mixture over the flour mixture. Press power to mix on speed 1 then gradually increase to speed 4 until well combined, about 1 minute.

Step 4
Heat a medium skillet over medium heat, with oil as necessary. Add 1/4 cup of batter to the skillet and cook flipping once, until cooked through, about 2 minutes per side. Repeat with the remaining batter, adding oil as necessary.

Step 5
To prepare the peanut butter syrup, combine creamy peanut butter and maple syrup in a bowl. Stir until smooth.

Step 6
Serve pancakes topped with syrup.
