Ingredients

  • 6 uncooked smoked bacon strips
  • ¼ cup mayonnaise  
  • 1/4 cup hot sauce 
  • 20 uncooked tater tots 
  • 6 large eggs, cracked
  • Kosher salt, as desired
  • Ground black pepper, as desired
  • 4–6 slices American cheese
  • 2 12-inch flour tortillas

Utensils needed

  • Silicone Tipped Spatula
  • Small Bowl

Instructions

Step 1
Place a Ninja™ Foodi™ NeverStick™  12-inch Fry Pan over on the stovetop over medium heat.

Step 2
Place the bacon in the pan and cook flipping frequently for about 10 minutes, or until desired doneness. While the bacon is cooking, combine the mayonnaise and hot sauce in a small bowl and set aside.

Step 3
When the bacon is done cooking, chop into bite-sized pieces, transfer to a paper towel lined plate and set aside.

Step 4
Place tater tots in the pan, no need to wipe clean. Cook over medium heat, pressing down to flatten slightly Cook flipping frequently until golden browned. Transfer to a plate and set aside.

Step 5
Increase the heat to high heat and crack the eggs in the pan. Season with salt and pepper. Top with cheese, add 2 tablespoons water and cover with a lid until the eggs are cooked and cheese is melted.

Step 6
When the eggs are cooked, cut into 2 portions and transfer to a plate.

Step 7
Reduce the heat to medium, place 1 tortilla in the pan and cook for 10 seconds or until pliable, then place on a clean work surface.

Step 8
Add 10 tater tots and half the chopped bacon to the center of the tortilla. Drizzle with spicy mayonnaise. Add eggs, cheese side down, careful to not break the yolks.

Step 9
Roll the burrito by folding the sides 1/3 of the way in and tucking the ingredients as you roll.

Step 10
Place the burrito back in the pan, seam side down. Cook over medium heat until golden brown on both sides, pressing as you cook.  

Step 11
Repeat with the remaining tortilla and ingredients. Serve with any extra spicy mayonnaise.
