Lasagna Soup

This is a fun and delicious take on a classic Italian dish, lasagna, but in soup form! This soup is a cozy hug in a bowl filled with all your favorite parts of a classic lasagna. It’s a great meal to prep for the week’s lunches or to serve your family for a quick, no fuss dish everyone will love.

TIP:

Feel free to make this with ground beef in place of turkey. It can also be made vegetarian using plant-based ground meat.

TIP:

Once cooking is complete, the pasta will continue to absorb the broth. Add up to 2 cups of additional broth or water after cooking to maintain a soupy consistency.

Ingredients

  • 2 tablespoons olive oil
  • 1 yellow onion, diced
  • 2 medium carrots, peeled, diced
  • 1 teaspoon Italian seasoning
  • 3 cloves garlic, peeled, minced
  • 1 pound ground turkey
  • 1 (24 ounce) can San Marzano tomatoes
  • 4 cups chicken or vegetable broth
  • 8 lasagna noodles, broken into pieces
  • 1 cup fresh basil leaves, plus more for garnish
  • Kosher salt, as desired
  • Ground black pepper, as desired
  • 1 cup ricotta cheese
  • ½ cup shredded mozzarella
  • ¼ cup grated Parmesan cheese

Utensils needed

  • Small Bowl

Instructions

Step 1
Remove the lid from the pot. Turn dial to SEAR/SAUTÉ, set temperature to HI, and press START/STOP to begin preheating. Allow the unit to preheat for 5 minutes.

Step 2
When preheating is complete, add the oil, onion and carrot to the pot. Cook uncovered for 5 minutes, stirring occasionally until tender.

Step 3
Add the Italian seasoning, garlic, and ground turkey to pot. Break up the ground meat into small pieces and continue to cook until the meat cooks through, about 10 minutes.

Step 4
When the meat is cooked, add the tomatoes and broth to pot. Stir to combine, then cover with the lid.

Step 5
Turn dial to BAKE, set temperature to 400°F, set time to 25 minutes, and press START/STOP to continue cooking.

Step 6
After 10 minutes, add the noodle pieces and basil leaves. Stir to combine then cover with lid. 

Step 7
Cook for up to 15 minutes, or until noodles are cooked. Season with salt and pepper as desired.

Step 8
While the soup cooks, in a small mixing bowl mix together the ricotta, mozzarella and Parmesan cheese. Set aside.

Step 9
When cooking is complete, serve the soup immediately with a dollop of the cheese mixture and fresh basil leaves.
